Allyson Young's Gran's English Christmas Pudding with Hard Sauce

We love traditional recipes and it doesn't get more traditional than Plum Pudding. Author Allyson Young shares her Gran's English Christmas Pudding recipe and her sizzling erotic suspense novel, Forever.


Traditional Plum Pudding Recipe (Christmas Pudding) (there are no plums in plum pudding, go figure)

Prep Time: 45 minutes

Cook Time: 4 1/2 hours

Yield: 2 plum puddings halving the recipe is easy

Ingredients:

-1 cup granulated sugar -1 cup butter at room temperature
-1/2 cup orange juice and 1/2 cup brandy
-2 eggs beaten
-2/3 cup molasses Mix together well in very large bowl.

-1/4 teaspoon salt
-1 teaspoon baking soda
-3 teaspoons baking powder -3 1/2 cups all-purpose flour plus 2 tablespoons -1 teaspoon ground cinnamon
-1/4 teaspoon ground cloves
-1/4 teaspoon ground nutmeg In medium bowl mix together and add into above mixture.

-1 1/2 cups raisins
-1 cup dates, chopped
-1/2 cup nuts, chopped
-3 tablespoons candied orange or lemon citron, finely chopped
-1 1/2 cups peeled, cored and chopped apples

In small bowl, mix together and add into above mixture. Mix well.


Grease two empty 2-pound coffee cans.

Place a large pot (that will hold both cans) on stove element. Place a rack or trivets in the bottom. Fill each greased can 1/2 full of batter and cover with pan lids or 2 layers of aluminum foil. Set in pot.

Add boiling water to 2/3 of the way up the side of the cans, bring rapidly to a boil. Reduce heat to medium-low, and boil gently 4 to 4 1/2 hours. You will need to add more boiling water. A fork should come out clean from centre of pudding to signify doneness.

Be sure to let the pudding cool to room temperature before removing—run a knife around the sides and upend to release. Wrap tightly in plastic wrap and store in a sealed plastic bag. The pudding will keep for about 3 weeks in the refrigerator or may be frozen.

While the pudding is ripening you can unwrap periodically and add more brandy or other spirits for a richer taste. Piercing the puddings makes this process easier.

To Serve: Microwave the pudding for just a few minutes until it is heated. Slice into portions and serve with Hard Sauce.


Hard Sauce: for 2 plum puddings
1 cup butter
2 cups confectioner’s sugar
3 tblsp. brandy or dark or spiced rum
1 tsp. vanilla extract

In small bowl, with mixer at medium speed, beat butter until smooth. At low speed, gradually beat in confectioners' sugar until creamy. Beat in rum or brandy with vanilla. Cover tightly and refrigerate up to 1 month. To serve, let stand at room temperature 30 minutes or until soft enough to spread over plum pudding.
